– With regard to the flavor, well, it all depends on the maturation of the meet, which takes at least 9 days, and on the cooking, strictly grilled and rare.
The only seasoning allowed? Coarse salt and Extra-virgin olive oil. Nothing else is needed to enhance the flavor of such a delicious meat.
